Hello blackburn

September 4, 2011

Back to the place I grew up in. Back to my baby. Such a scruffy little thing !

Of course you can’t come over empty handed ..

Honey joys

Adapted from the Kellog’s one.

I changed the ingredients slightly as I like the caramel taste of brown sugar & Manuka honey more.

Ingredients:

90g unsalted butter
 1/3 cup brown sugar
2 tbsp Manuka honey
4 cups Kellog’s corn flakes

Method

Preheat oven to 150 degrees C.

Melt butter, sugar, and honey in a saucepan over medium heat.

Turn off heat and add the corn flakes and mix in well until the corn flakes are covered in the honey sauce.

Scoop into patty pans & put into the oven for around 10 minutes (this really depends on your oven, just make sure you don’t burn them !)

Makes 12 but can make more if you use the mini patty pans.

I made so many honey joys in the past week or two. The great thing about this recipe is that it’s so delicious plus it takes altogether 15 minutes or less cooking time.
